Low-Carb, Keto Shrimp and Sausage Gumbo
A rich, hearty keto shrimp and sausage gumbo made without any flour or roux. A homemade shrimp broth builds deep flavor, while guar gum thickens the pot the low-carb way. Loaded with plump shrimp and spicy Italian sausage, it's grain-free, gluten-free, and filling enough for a special keto dinner — perfect for Father's Day.

For the Shrimp Broth Shells from 1 lb shrimp reserve the peeled shrimp for the gumbo 1 jalapeño 1/4 cup yellow onion 2 celery ribs 3 bay leaves 2 garlic cloves 2 shakes Cajun seasoning 6 cups water For the Gumbo 1 teaspoon oil 1 green bell pepper 2 stalks celery 1/4 cup yellow onion 2 bay leaves 2 tablespoons Cajun seasoning 1/2 tablespoon black pepper 1 lb hot Italian sausage links 1 lb shrimp peeled and deveined (reserved from above) Salt to taste 3 tablespoons guar gum healthy thickener
Make the Shrimp Broth Peel and devein the shrimp. Set the shrimp aside in a bowl and place the shells in a pot.
Chop and cut all the broth vegetables. Crush the bay leaves by hand and add them to the pot, then mince the garlic cloves and add them as well.
Pour 6 cups water into the pot and place the lid on top.
Bring to a rapid boil, then shake in the broth seasonings.
Reduce the heat to low and let the broth simmer, covered, for 1 hour.
Strain the broth and set aside.
Make the Gumbo Cut the sausage into 1/8-inch slices. Chop all the gumbo vegetables and set aside.
Add the oil to a large skillet or stockpot set over medium-high heat.
Add the vegetables, crushed bay leaves, and all the gumbo dry seasonings. Sauté until the vegetables are tender, about 10 minutes.
Pour in the reserved shrimp broth and bring to a boil. Cover and simmer about 15 minutes.
Add the shrimp and sliced sausage and simmer 10 minutes more, or until the sausage is cooked through.
Add salt to taste.
Evenly sprinkle some guar gum over the gumbo and stir in. Keep adding until your desired thickness is reached.
Serve.
