Ingredients
  

  • 1/3 cup chia seeds
  • 1/3 cup pumpkin seeds
  • 1/3 cup sesame seeds
  • 1/3 cup sunflower seeds
  • 1/3 cup flax seeds
  • 1 cup almond flour
  • 1 tablespoon psyllium husk powder
  • 1 cup water
  • 1/4 cup coconut oil
  • 1 teaspoon salt

Prep Your Equipment:

  • Preheat oven to 300°F (150°C). This lower temperature is crucial for heat-sensitive seeds.
  • Line an 11x17 inch baking sheet with parchment paper to prevent sticking.

Prepare the Seed Mixture:

  • Place all seeds, almond flour, salt, and psyllium powder in a food processor.
  • Grind to a uniform small size - this ensures even texture throughout your crackers.

Create the Dough:

  • Boil 1 cup of water and ensure coconut oil is in liquid form.
  • Pour ground seed mixture into a large mixing bowl.
  • Slowly pour boiling water into the seed mixture, stirring continuously until thoroughly mixed.
  • Let the mixture rest for 10-15 minutes - this allows the psyllium to create a gel-like consistency

Score:

  • Spread mixture onto prepared baking sheet and use a small roller to roll as thin as possible - the thinner the dough, the crispier the crackers.
  • Score the dough with straight lines using a spatula edge to create cracker-sized rectangles.

Bake to Perfection:

  • Bake for 1 hour, checking periodically as seeds are heat sensitive
  • When edges start browning, turn off oven and let crackers cool slowly inside.
  • Finish cooling on a wire rack to room temperature.
