- 1/3 cup chia seeds
- 1/3 cup pumpkin seeds
- 1/3 cup sesame seeds
- 1/3 cup sunflower seeds
- 1/3 cup flax seeds
- 1 cup almond flour
- 1 tablespoon psyllium husk powder
- 1 cup water
- 1/4 cup coconut oil
- 1 teaspoon salt
Prepare the Seed Mixture:
Place all seeds, almond flour, salt, and psyllium powder in a food processor.
Grind to a uniform small size - this ensures even texture throughout your crackers.
Create the Dough:
Boil 1 cup of water and ensure coconut oil is in liquid form.
Pour ground seed mixture into a large mixing bowl.
Slowly pour boiling water into the seed mixture, stirring continuously until thoroughly mixed.
Let the mixture rest for 10-15 minutes - this allows the psyllium to create a gel-like consistency
Score:
Spread mixture onto prepared baking sheet and use a small roller to roll as thin as possible - the thinner the dough, the crispier the crackers.
Score the dough with straight lines using a spatula edge to create cracker-sized rectangles.
Bake to Perfection:
Bake for 1 hour, checking periodically as seeds are heat sensitive
When edges start browning, turn off oven and let crackers cool slowly inside.
Finish cooling on a wire rack to room temperature.
