Two-Minute Blueberry Sauce (Sugar-Free, High-Protein Friendly)

Some recipes are worth it because they’re clever. This one is worth it because it’s fast. You can have a thick, glossy, jammy blueberry sauce ready before the kettle’s even boiled. No pectin, no setting time, no canning, and hardly any sugar. Stir it through a pot of skyr and you’ve basically made a copycat Müller Corner for way less money and way less sugar.

Why it works

Normal jam needs sugar and pectin to set, plus a long boil to get there. This version skips all of that and uses xanthan gum instead. Just a tiny bit thickens the berry juices almost straight away once it hits the heat. That means you can use as little sweetener as you want and not worry about whether it’ll set. It also means the whole thing takes about two minutes of actual cooking.

The lemon juice does two jobs. It sharpens the flavour so the sauce tastes like real fruit instead of just sweet, and a little bit of acidity keeps the colour bright.

A quick note on xanthan gum

Xanthan gum is strong stuff, and it’s the one place this recipe can go wrong. Too much and your nice sauce turns gloopy and a bit slimy. Start with ½ teaspoon, or even ¼, for 150g of berries, and only add more if you really want it thicker. Always add it slowly while stirring. You can thicken a loose sauce in seconds, but it’s hard to fix one that’s gone gluey.

Ways to use the blueberry sauce

This is where it really earns its spot in the fridge:

  • Copycat Müller Corner. Swirl a spoonful through a pot of thick skyr or greek yoghurt. With a high-protein skyr you’re looking at a dessert with around 40 to 50g of protein and barely any sugar. It honestly tastes better than the shop-bought ones.
  • On a keto cheesecake. A glossy dark spoonful over a plain cheesecake looks and tastes way fancier than the effort it took.
  • Stirred into chia seed pudding
  • Over keto pancakes, Greek yogurt or ice cream.
  • On toast or in a sandwich with low carb bread if you just fancy a low-sugar jam.

For about 10 to 15 minutes of work, this does a lot. It’s cheaper than buying flavoured high-protein yogurts, it has way less sugar than normal jam, and it turns a plain pot of skyr into something that feels like a proper treat. Make a batch on a Sunday and you’ve got dessert sorted for the week.

If you give it a go, have a play with the fruit. Raspberries, blackberries or a bag of mixed frozen berries all work brilliantly with the same method.

Blueberry sauce

A quick, thick and glossy blueberry sauce made with sweetener, lemon juice and xanthan gum instead of sugar and pectin. It takes about two minutes to cook and sets to a jammy texture as it cools. Swirl it through high-protein skyr for a copycat Müller Corner, spoon it over cheesecake, or use it as a low-sugar jam.

Ingredients
  

  • 150 g blueberries fresh or frozen
  • 75 g erythritol sweetener Add more if needed. You can use other sweeteners if preferred, adjust the quantity based on their sweetness.
  • 1/2 tbsp xanthan gum
  • 2 tbsp lemon juice

Instructions
 

  • Put everything in a small pan. Tip in the blueberries, sweetener and lemon juice. If you're using frozen berries you don't need to defrost them.
  • Bring it to a boil over medium heat, stirring. The berries will soften, burst and let out a deep purple juice. Stir for about 8-9 minutes. Squash a few berries against the side of the pan if you want it smoother, or leave them whole for texture.
  • Add the xanthan gum a little at a time. Sprinkle it in slowly while you keep stirring. Don't dump it all in at once or it'll clump. You'll feel it start to thicken almost right away.
  • Let it bubble for a minute, stirring the whole time. Once it's glossy and coats the back of the spoon, take it off the heat.

  • Let it cool. It thickens more as it cools, so take it off the heat while it still looks a bit loose. It'll firm up to a jammy texture in the jar.
  • Keep it in a clean jar in the fridge. It lasts about a week. Serve with yoghurt, chai seed pudding, use to top cheesecake and other deserts.
