Keto Breakfast Casserole
If there is one recipe that has saved my weekend mornings since I started eating low carb, it is a good breakfast casserole.

This keto breakfast casserole is everything I want from a savoury start to the day: soft, fluffy baked eggs, plenty of sausage, melty mature cheddar and a generous helping of low carb veg, all baked together in a single dish.
It is properly filling, it reheats like a dream, and it has been a fixture of my ketogenic diet ever since I worked out that you do not need a scrap of bread or potato to make an egg bake feel like a proper meal.
I make a big tray of this at the start of a busy week and cut it into squares for grab-and-go breakfasts. Every slice is naturally gluten free and grain free, packed with protein and good fats, and it keeps me full for hours, which is exactly what I want from a keto friendly breakfast.

What makes this casserole keto?
A traditional breakfast bake usually leans on potato, bread or a flour-thickened custard to give it bulk. On a low carb diet, none of that earns its place. Instead, I use cauliflower as the bulking veg, and honestly you will not miss the spuds. Cauliflower is one of my favourite low carb vegetables — it is mild, soaks up flavour and gives that satisfying, hearty texture potato would, with only a fraction of the carbs.
The set, custardy texture comes from whole eggs loosened with double cream rather than milk, which keeps the carbs down and the richness up. Add full-fat cheese and good sausage and you have a keto friendly casserole that feels indulgent while staying firmly low carb.
How to make keto breakfast casserole

Here is the short version — the full method is in the recipe card below.
- Cook the veg and sausage. Soften the onion and pepper in a little oil, then add the sausage meat and brown it through. Stir in the spinach right at the end so it wilts.
- Layer up the dish. Spread your cooked cauliflower across a greased baking dish, then scatter over the sausage and veg in an even layer.
- Make the egg custard. Whisk the eggs with double cream, most of the cheddar, and the seasonings until smooth.
- Pour and top. Pour the egg mixture evenly over the dish, making sure it reaches into the corners, then scatter the remaining cheese on top.
- Bake. Bake until the centre is just set and the top is golden, then let it rest before slicing.
My top tips

- Dry your cauliflower well. Cooked cauliflower holds water, so pat it dry before it goes in. A dry base is the secret to a casserole that sets rather than weeps.
- Grease generously. A good smear of butter around the dish means clean slices and easy serving.
- Cover if it browns too fast. If the top colours before the middle has set, lay a sheet of foil loosely over the top for the last 10 minutes.
- Always let it rest. Ten minutes out of the oven lets the eggs firm up so you get tidy squares instead of a scramble.
- Season the eggs properly. Eggs are bland without enough salt — taste-check your custard before it goes in the dish.
Substitutions and variations

- Sausage: Swap the pork sausage meat for chopped gluten free chipolatas, cooked streaky bacon, diced ham or browned beef mince. Always check sausages are gluten free, as some contain rusk.
- Cream: Full-fat cream cheese or soured cream both work in place of double cream if you want a slightly tangier bake.
- Veg: Mushrooms, courgette, leeks or broccoli all make great low carb swaps — just cook off any moisture first.
- Cheese: Red Leicester, Gruyère or a little crumbled feta all work brilliantly instead of, or alongside, the cheddar.
- Spice it up: A pinch of chilli flakes, a little smoked paprika or a dash of hot sauce in the eggs gives it a lovely warmth.
However you tweak it, this keto breakfast casserole proves that a low carb diet can still mean a hot, hearty, comforting breakfast — no toast required.
Keto Breakfast Casserole
Ingredients
- Butter for greasing
- 350 g cauliflower florets cooked and patted dry
- 1 tbsp olive oil
- 1 small onion finely chopped
- 1 red pepper deseeded and chopped
- 300 g pork sausage meat or gluten free sausages, skins removed
- 100 g baby spinach
- 8 large eggs
- 150 ml double cream
- 200 g mature cheddar grated (150g for the mix, 50g for the top)
- 1 tsp fine sea salt
- ½ tsp ground black pepper
- ½ tsp garlic granules
- ¼ tsp smoked paprika
Instructions
- Preheat the oven to 180°C fan / 200°C / Gas 6. Grease a 9 x 13 inch (roughly 23 x 33cm) baking dish well with butter.
- Heat the olive oil in a large frying pan over a medium heat. Add the onion and red pepper and cook for 4 to 5 minutes until softened.
- Add the sausage meat and cook for 5 to 6 minutes, breaking it up, until browned and cooked through. Stir in the spinach and cook for 1 minute until wilted. Drain off any excess liquid.

- Spread the cooked cauliflower over the base of the prepared dish, then scatter over the sausage and vegetable mixture in an even layer.

- In a large bowl, whisk together the eggs, double cream, 150g of the cheddar, salt, pepper, garlic granules and smoked paprika.

- Pour the egg mixture evenly over the dish, making sure it reaches the corners, then scatter the remaining 50g cheddar over the top.
- Bake for 35 to 40 minutes, until the centre is just set and the top is golden. Cover loosely with foil if it browns too quickly.

- Leave to rest for 10 minutes before slicing into squares and serving.
